Yep, it's eggs, plain flour, milk and a grind of salt and pepper.
I heap the flour into a bowl, add the eggs and beat the flour into the eggs steadily until smooth, this means you don't get lumps, it's very important not to have lumps. Then you gradually add the milk until the batter is the constituancy of single cream, add a bit of salt (it aids rising) and pepper to taste.
Now put a little bit oil/dripping into your pudding tins and put into a hot oven to heat, when the oil/dripping starts to smoke add the batter to the tins and put into the oven, don't open the oven door for at least 15 mins so they will rise properly, take them out of the oven when they are well risen, set and goled and browning at the edges.

No pudding tins, so I will have to use one large tray ... that should still work?
anyway, thanks, I'm ready to try that. I used to make it with less milk and more water, but I've forgotten the proportions and have never tried it in the newer ovens (ie those available after 1980!).

I used to make it as a stand-alone pudding, and definitely used water as well as milk ... the result was probably a flatter, denser pudding than the ones you showed images of.
Also used to make an excellent damper with beer, self-raising flour, salt, and sultanas ... have to dig that one out

I love how lardy uses the internet for his research. Asking questions on a cricket forum about how to make Yorkshire puddings, when a google search turns up 350K+ results.
